Most of our work is building other people's restaurants. 66 Chuim is where we turn that same discipline inward.
Born of whimsy, not strategy. Phat Fillings was a pot pie cloud kitchen first. It became something with a door and tables. Around twenty two dishes, small and shifting when they need to. Driven by instinct. What Chef Vidit wants to cook. What feels right.
It isn't a sandwich shop. It isn't a pot pie shop. It isn't quite a cafe either. Labels never really fit, so we didn't force them.
The kitchen sits on the ground floor. The dining unfolds above it. A small food elevator, lovingly called Bojack, moves plates up as they're ready. Set within Chuim Village, the space feels like it belongs there. Portuguese era homes, narrow lanes, a certain pace. A contemporary edge, but it doesn't overpower where it is. Nothing here is overworked. That's the point.
Vidit Aren, who founded Mettle Hospitality, is a co founder here. Alongside Xerxes Bhathena and Tejas Agrawal. Xerxes leads the sodas program and dining room experience. Tejas leads the specialty coffee and brews program. The same rigor that shapes client kitchens. Just applied to a space we actually sit in.
Food and beverages we genuinely want to make, in a space that reflects that way of thinking. For the enthusiast, by the enthusiast.
